Brine Calculator — salt and sugar by percentage

Work out the salt and sugar for a wet, equilibrium or dry brine at the salinity you choose, in weight and in spoons, for any salt type and any batch size.

An equilibrium brine sets the percentage against the meat and water together, so the food cannot become saltier than the target however long it sits. A standard wet brine sets it against the water alone, which is stronger and time-dependent. A dry brine sets it against the meat only.
Water is ignored for a dry brine. For a wet brine, use enough to submerge the food completely and measure what you actually used rather than estimating.
Sugar is optional and takes the same base as the salt. It contributes to browning and balances perceived saltiness; it does not preserve at these levels.
Salt crystals differ enormously in how much weight fills a spoon, which is why the same recipe can be twice as salty with a different box. The pre-filled figures are approximations; weighing the salt removes the problem entirely.

A brine is a salt solution, and the only number that describes it usefully is a percentage. Recipes written as "half a cup of salt per gallon" fail the moment you change the salt, the batch size or the container, because a cup of flaked salt weighs roughly half what a cup of fine salt weighs. The brine calculator above works in percentages of weight, which is the form that scales and transfers, and then converts back into spoons if that is how you intend to measure.

What This Brine Calculator Does

Enter the weight of the food, the volume of water if you are using any, and a target salinity, and the tool returns the salt to weigh out, the equivalent in tablespoons for your salt type, the sugar if you want it, and two cross-checks: how strong the water itself is, and how much salt is being applied per kilogram of meat.

Three brine types are offered because the same percentage means three different things. An equilibrium brine takes the percentage of the meat and water combined, which is the version that cannot over-salt: once the salt has distributed evenly the food sits at the target concentration and stays there. A standard wet brine takes the percentage of the water alone, producing a stronger solution that the food will keep absorbing, so time has to be controlled. A dry brine takes the percentage of the meat and uses no water at all.

The salt-type selector exists because volume measurement is where most brine recipes go wrong. Crystal shape changes how much salt fills a spoon by a factor of nearly two between the finest and the flakiest products, and the pre-filled figures are approximations offered for convenience. How to Use It

  1. Weigh the food. Everything else is a percentage of a weight, so an estimate here propagates straight through to the salt.
  2. Choose the brine type. Equilibrium is the forgiving option and the one to pick if the timing might slip. Standard wet is the traditional method and needs the clock watched.
  3. Set the salinity. Lower percentages season gently over a longer period; higher ones work faster and are easier to overshoot. Move in small steps and record what worked.
  4. Select your salt type or enter grams per tablespoon if you measure by volume. If you have a scale, ignore this and use the weight figure.
  5. Keep the whole thing refrigerated for the duration, and note the time. Brining is a cold process from start to finish.

The Formula and How It Is Calculated

Each brine type uses a different base weight:

Equilibrium brine: salt = (meat weight + water weight) × target % ÷ 100

Standard wet brine: salt = water weight × target % ÷ 100

Dry brine: salt = meat weight × target % ÷ 100

Water weight is taken as one gram per millilitre, which is accurate enough at kitchen temperatures. Work through the defaults: 4,000 grams of meat and 4,000 millilitres of water gives a combined 8,000 grams, and at 3 percent the equilibrium brine needs 240 grams of salt. Sugar at 1.5 percent of the same base is 120 grams. In coarse kosher-style salt at roughly 15 grams a tablespoon, 240 grams is about 16 tablespoons.

Switch to a standard wet brine and the same 3 percent target applies to the 4,000 grams of water alone, so the salt falls to 120 grams — but the solution is now twice as concentrated relative to the meat, and the food will keep taking salt up for as long as it sits. That is the whole difference between the two methods in one line: the equilibrium version has a ceiling, the standard version has a clock.

The two cross-checks in the grid help you see what you have actually made. Strength of the water expresses the salt as a percentage of the water only, which is the figure most published recipes are implicitly quoting. Salt per kilogram of meat is the figure that best predicts how the finished food will taste, and it is the one worth writing in your notes.

What the Salt Is Actually Doing

Two things happen at once, and they run on different timescales. Salt diffuses into the meat, which is slow and depends on thickness rather than weight — a thin cut reaches equilibrium in hours while a whole bird takes far longer, even though both are the same percentage of the same brine. Meanwhile the salt alters the muscle proteins, unwinding them enough that they hold on to water rather than expelling it during cooking. That is why brined meat is juicier: less moisture is lost, not more moisture added.

Diffusion depending on thickness rather than weight is the practical consequence that catches people out. Doubling the number of chicken thighs in the brine does not double the time; doubling the thickness of a single piece more than doubles it. Any timing you settle on is tied to the geometry of what you brined, not to the batch.

A dry brine reaches the same destination by a different route. Salt applied to the surface draws moisture out, dissolves in it, and that concentrated solution is then reabsorbed. The meat is not dried out by the process, and because there is no added water the surface ends up drier, which browns better. Sugar is doing something else again: at the levels used here it contributes to surface colour and softens the perception of saltiness, and it is not preserving anything.

Time, Temperature and the Line You Do Not Cross

Brining is a refrigerated operation. The USDA Food Safety and Inspection Service's guidance on basting, brining and marinating poultry is explicit: the food is fully submerged and held covered in the refrigerator or in a cooler with ice, the refrigerator should be at 40 °F or below throughout, and poultry may be held for up to two days after being thawed or bought fresh. It also specifies food-grade plastic, stainless steel or glass containers, and food-grade bags rather than household bin liners.

Two further points from the same guidance are worth stating plainly. Brine that has been in contact with raw meat is not reusable and is not a sauce; it goes down the drain. And the food is removed from the brine, patted dry, and then cooked — brining is a seasoning and moisture-retention step, not a preservation step, and it does nothing to make undercooked meat safe.

That last point is the one this page will not soften. Sodium, Salt and Reading the Numbers Correctly

A brine puts far less salt into the food than the calculation might suggest, because most of the solution is poured away. In an equilibrium brine the food finishes at roughly the target percentage; in a standard wet brine what is retained depends on time and thickness and is genuinely difficult to predict, which is one more argument for the equilibrium method when you care about the outcome.

Salt and sodium are not the same number, and food labels use the second. Sodium chloride is about 40 percent sodium by weight, so a figure quoted as sodium is considerably smaller than the same amount described as salt, and the two get mixed up constantly. One category deserves a specific caution: commercially processed poultry and pork are frequently sold pre-brined or enhanced with a salt solution, and this is stated on the label. Brining a product that has already been treated stacks one salinity on another and the result is usually inedible. Check the label before you start. Common Mistakes to Avoid

  • Measuring salt by volume without checking the type — a tablespoon of flaked salt can weigh little more than half a tablespoon of fine salt, which turns a mild brine into an inedible one.
  • Brining at room temperature — the whole process belongs in the refrigerator or a cooler with ice, with the food fully submerged and covered.
  • Reusing brine or serving it — liquid that has been in contact with raw meat is discarded, never reused and never turned into a sauce.
  • Brining meat that was sold pre-brined — enhanced poultry and pork already carry a salt solution, and the label says so. Adding a second brine on top is rarely recoverable.
  • Treating brining as a safety step — it seasons and helps retain moisture. Safe cooking is a measured internal temperature confirmed with a thermometer, and brining does not change that.
