What This Turkey Cooking Time Calculator Does
Enter the weight of your thawed turkey and say whether it is stuffed. The tool returns the roasting time band for that weight at 325°F, the total oven-to-table time once the stand is included, the equivalent minutes per pound at the slow end of the band, and the safe minimum internal temperature the bird must reach. Give it a serving time and it also tells you the latest moment the turkey can go into the oven.
The bars underneath show the unstuffed band, the stuffed band and the stand time together, which makes the cost of stuffing the bird visible at a glance. On most weights the stuffed version takes between fifteen and forty-five minutes longer, and the reason has nothing to do with the extra mass — it is covered below.

How to Use It
- Enter the weight of the thawed bird. The chart covers 8 to 24 pounds. Outside that range the published times do not apply and you should rely entirely on a thermometer.
- Say whether it is stuffed. This is not a small adjustment, and stuffing brings its own temperature requirement.
- Set the serving time. The oven-entry deadline is calculated from the slow end of the band, so it has the safety margin built in.
- Set the oven to 325°F. FSIS guidance is to set the oven no lower than 325°F, and the whole chart assumes that temperature.
- Check with a thermometer from about an hour before the low end of the band. Ovens vary far more than birds do.
The Chart and How It Is Calculated
These are the FSIS roasting times for a thawed turkey in a 325°F oven. Unstuffed: 8 to 12 pounds takes 2¾ to 3 hours; 12 to 14 pounds takes 3 to 3¾ hours; 14 to 18 pounds takes 3¾ to 4¼ hours; 18 to 20 pounds takes 4¼ to 4½ hours; and 20 to 24 pounds takes 4½ to 5 hours.
Stuffed birds run longer at every weight: 8 to 12 pounds takes 3 to 3½ hours; 12 to 14 pounds takes 3½ to 4 hours; 14 to 18 pounds takes 4 to 4¼ hours; 18 to 20 pounds takes 4¼ to 4¾ hours; and 20 to 24 pounds takes 4¾ to 5¼ hours.
The calculator looks your weight up in that table rather than interpolating a false precision from it, then applies:
Oven-entry deadline = serving time − carving allowance − 20 minute stand − slow end of the band
Take the default of a 16 pound unstuffed bird. That falls in the 14 to 18 pound band, so the roasting time is 3¾ to 4¼ hours. Adding the 20 minute stand gives 4 hours 35 minutes from oven to table at the slow end. With 15 minutes allowed for carving and a 3pm serving time, the bird has to be in the oven by 10:10am. At the slow end of the band, 4.25 hours across 16 pounds is just under 16 minutes per pound.

165°F Is the Number That Matters
The safe minimum internal temperature for turkey is 165°F, and it is measured with a food thermometer in three places: the innermost part of the thigh, the innermost part of the wing, and the thickest part of the breast. The thigh generally reaches temperature last on a whole bird, which is why FSIS guidance directs you there first and then asks you to confirm the other two.
Every time on the chart is an estimate of when to start checking. Ovens run hot and cold against their dials, birds differ in shape, a roasting bag or a covering of foil changes the heat transfer, and opening the door repeatedly costs time that no chart can predict. Two turkeys of identical weight in two different kitchens can differ by the better part of an hour.
Colour is not a doneness test, and neither is the pop-up timer that comes in some birds. Poultry can remain pink at a safe temperature and can look convincingly done well below one. Why a Stuffed Bird Takes Longer Than the Extra Weight Explains
The intuitive answer is that stuffing adds mass, so it takes longer. That is part of it, but the larger part is where the mass sits. Stuffing fills the cavity, which on an unstuffed bird is an open space that hot oven air circulates through, heating the interior from the inside as well as the outside. Pack it, and you have replaced a heat channel with a dense, wet insulator.
That matters because the stuffing itself must reach 165°F at its centre, and the centre of the cavity is the last place in the whole bird to get there. It is entirely possible for the breast to be perfectly cooked and slightly past it while the middle of the stuffing is still well below a safe temperature — which is why the chart adds time rather than trusting the meat reading.
The practical consequence is that stuffing the bird means checking two temperatures, not one, and the stuffing reading is the binding constraint. Many people who want the flavour without the timing problem cook the stuffing separately in a dish, which removes the whole issue and gives a better crust on the stuffing as a bonus. If you do stuff the bird, the accepted practice is to stuff it loosely and immediately before it goes into the oven, never in advance.
Working Backwards From the Meal Is the Whole Skill
The turkey is rarely the hardest part of a holiday meal. It is long but predictable, and it occupies the oven for the entire window in which everything else also wants to be in the oven. Planning backwards from the serving moment is the only way this works.
The 20 minute stand is not dead time, it is the most valuable window you have. The bird is out of the oven, which frees it entirely for roast potatoes and anything else that needs high heat, and the turkey holds its temperature well because of its mass. Standing also lets the juices set, which makes carving substantially cleaner.
Build in more slack than you think you need at the front. If the turkey finishes early it can rest longer under loose foil without harm; if it finishes late, everything else is already cold. What Changes the Time, and What Only Seems To
Several things genuinely shift roasting time. A covered or bagged bird cooks faster because the trapped steam moves heat efficiently, though it browns less. A bird straight from a cold fridge takes longer than one that has stood briefly. A convection oven moves heat more aggressively than a conventional one. And a bird that is still partly frozen, which is by far the most common cause of a turkey running hours over, follows no chart at all.
Several other things change less than people expect. Basting is largely a wash — you lose oven heat each time you open the door, which roughly cancels any benefit, and the skin browns from dry heat rather than from being wetted. Trussing changes the shape more than the time. And the difference between a fresh and a previously frozen bird of the same weight is negligible once both are fully thawed.
Raising the oven temperature to save time is the one adjustment to resist. It browns the outside faster without meaningfully speeding the centre, which widens the gap between a burnt exterior and an underdone core. FSIS guidance sets 325°F as the floor rather than the ceiling, but the chart on this page describes 325°F, and going substantially above it means you are no longer following any published timing at all.
