There is no single rice-to-water ratio, and the confident one-line answers you find online are all describing one variety cooked one way. Brown rice takes nearly twice the water of short grain white. A pressure cooker needs barely half what an open pan does, because nothing evaporates from a sealed pot. What This Rice Water Ratio Calculator Does

How to Use It
- Choose the variety honestly. "White rice" is not a category with one ratio — long, medium and short grain differ by a third.
- Choose the method before you look at the water, since a sealed cooker needs far less than an open pan.
- Enter rice or people. Portion size is an input because rice as a side and rice as the meal are different quantities.
- Adjust the water if your last batch was wrong — five percent either way is a visible difference in the finished grain.
- Rest it covered for the stated time before lifting the lid, and fluff with a fork rather than a spoon.
The Formula and How It Is Calculated
The core is a ratio applied by volume:
Water = dry rice volume × variety ratio × method factor × (1 + adjustment% ÷ 100)
Working in grams, the rice is converted to cups at 185 grams per cup, the water is calculated in cups, and the result is returned in millilitres at 236.6 millilitres per US cup — which, since a millilitre of water weighs almost exactly a gram, is also its weight.
The variety ratios used are 1.75 for long grain white, 1.5 for basmati and jasmine, 1.5 for medium grain, 1.25 for short grain and sushi rice, 2.25 for brown rice, 2.0 for parboiled and 3.0 for wild rice. Brown rice sits highest because the intact bran layer slows water entry and the grain needs far longer on the heat, during which more water evaporates. The 2.25 figure for brown rice and the 35-to-40 minute cook time match the method published by Oregon State University Extension's stovetop brown rice recipe.
The method factor is where the pressure cooker diverges. In a covered pan a meaningful share of the water leaves as steam over the cooking time, so the ratio has to cover both absorption and evaporation. In a sealed pressure cooker almost nothing escapes, so the water only has to cover absorption — the ratios drop to around 1:1 for white rice and 1.25:1 for brown. Using a stovetop ratio in a pressure cooker is the single most common cause of rice soup.
Cooked weight is estimated as dry weight + water weight × retention, where retention is 0.9 in an open-lidded pan and 1.0 in a sealed cooker. Work the loaded example: two cups of long grain white on the hob needs 2 × 1.75 = 3.5 cups of water. Two cups of rice is about 370 grams and 3.5 cups of water about 828 grams, so the finished rice weighs roughly 370 + 745 = 1,115 grams. At a 75-gram dry portion that is about 4.9 servings, cooked for 18 minutes and rested for 10.
Why Rinsing and Soaking Change the Answer
Rinsing rice removes loose surface starch. That starch is what makes grains stick together, so rinsing gives separate grains and not rinsing gives a stickier result. Neither is wrong — a sushi rice is deliberately not rinsed as thoroughly, and a pilaf is rinsed until the water runs clear — but the choice belongs to the dish rather than to the rice.
Soaking is a different matter and it does change the water. Rice that has soaked for thirty minutes has already absorbed water, so it needs less in the pan and cooks faster. Basmati is the variety where this is most standard, and the 1.5 ratio used here assumes a rinsed and briefly soaked grain. Cooking unsoaked basmati at that ratio will leave it firmer than intended; add five to ten percent water or accept a firmer grain, which for a biryani is arguably what you want.
Age matters too, and it is invisible. Older rice has dried out and takes up more water than a freshly harvested crop, which is why a bag from a different harvest can behave differently at the same ratio. This is the main reason the water adjustment field exists: your rice, your pan and your hob together have a preferred setting, and finding it once is worth more than any published ratio.
Pans, Lids and the Evaporation Problem
The ratio for a covered pan assumes the lid actually fits. A loose or warped lid lets steam out at a rate that no ratio can account for, and the symptom is rice that is dry and scorched at the bottom while the top is still hard. If your rice does that consistently, the lid is the first thing to check, not the ratio.
Pan width matters for the same reason: a wide, shallow pan has far more surface area for evaporation than a tall narrow one, so the same rice and the same water behave differently. A heavy pan with a well-fitting lid and a low, steady heat is what the traditional ratios were developed on, and departing from that is a legitimate reason to adjust.
Altitude is a real factor that most rice instructions ignore. Water boils below 212 degrees Fahrenheit as you climb, so rice simmers cooler and needs longer, and a longer time on the heat means more evaporation and therefore more water. Yield, Portions and Nutrition Figures
Rice roughly triples in weight when cooked, which has two practical consequences. The first is portioning: a 75-gram dry side portion becomes a bit over 200 grams on the plate, which looks like a great deal more rice than the dry measure suggested. The second is nutrition arithmetic, where the tripling causes constant confusion — cooked rice has roughly a third of the calories per 100 grams of dry rice, because two thirds of the added weight is water.
The rule is the same one that applies to pasta: match the weight to the entry. If you weighed it dry, use the dry figures; if you weighed it cooked, use the cooked ones.
