What This Coffee Ratio Calculator Does
Choose a method, and the tool loads a typical ratio and a typical grounds retention figure for that style of brewing. You can then anchor the calculation three ways. Work from the amount of coffee you actually want in the cup and it solves backwards through retention to find the dose and the water. Work from a total water weight and it gives you the matching dose. Or work from a dose you have already weighed — because the bag was nearly empty — and it tells you how much water that dose supports at your chosen ratio.

One boundary is worth stating plainly, because the two tools are often confused. How to Use It
- Pick your brew method. This sets a sensible starting ratio and retention. Both fields remain editable, and adjusting the ratio is how you make the drink stronger or weaker.
- Choose what you are working from. Cup output is the most useful for planning a brew for guests. Total water suits a machine with a fixed reservoir marking. A weighed dose suits using up what is left in the bag.
- Enter your cup size honestly. A mug is usually 300 to 350 millilitres, not the 150 millilitre unit that many machine markings assume, which is the most common reason a machine's cup count feels wrong.
- Adjust the ratio in small steps. Moving from 1:16 to 1:15 is a noticeable increase in strength. Jumping several points at once makes it hard to tell what changed.
- Weigh, do not scoop. A level tablespoon of whole beans and of fine grounds are different masses, and the difference is large enough to move the ratio by a point or two.
The Formula and How It Is Calculated
The base relationship is a single multiplication. With a ratio of 1:R:
Water = dose × R and Dose = water ÷ R
Retention makes the cup calculation slightly more interesting. If wet grounds keep k grams of water for every gram of dry coffee, then the liquid that reaches the cup is:
Beverage = dose × R − dose × k = dose × (R − k)
which rearranges to dose = beverage ÷ (R − k) when you are working backwards from a target amount in the cup.
Take the default loaded above: two cups of 250 millilitres each is 500 millilitres of drink, at 1:16 with a retention of 2. The dose is 500 ÷ (16 − 2) = 500 ÷ 14 = 35.7 grams. The water is 35.7 × 16 = 571.4 grams. Check it: 571.4 grams poured, minus 2 × 35.7 = 71.4 grams held in the grounds, leaves 500 grams in the cup. That is the whole calculation.
Note that retention scales with the dose, not with the water. Doubling the brew doubles the water held back but keeps the proportion identical, so the loss as a fraction of your pour depends only on the ratio and the retention figure. At 1:16 with a retention of 2, you lose one eighth of the water regardless of batch size.
Ratio Sets Strength, Grind Sets Extraction
These two are constantly conflated and they are not the same thing. Strength is how much dissolved coffee is in the drink relative to the water — that is the ratio's job. Extraction is what percentage of the soluble material in the grounds you managed to pull out — that is chiefly grind size, contact time and water temperature.
The practical consequence is that some problems cannot be fixed by moving the ratio. A brew that tastes thin and sour is usually under-extracted, and adding more coffee at the same grind gives you a stronger version of the same sour drink. The fix is a finer grind or a longer contact time. Likewise a harsh, drying bitterness is usually over-extraction, and diluting it makes a weaker bitter drink rather than a pleasant one — the fix is a coarser grind or a shorter brew.
The useful diagnostic is to change one thing at a time and describe what you taste rather than whether you liked it. Sour, thin and lacking sweetness points at extraction being too low. Bitter, dry and hollow points at extraction being too high. Balanced but simply too weak or too strong points at the ratio, and that is the one this calculator fixes directly.
Why Every Method Has a Different Default Ratio
The ratios that get recommended for each brewing style are not arbitrary preferences. They follow from how the water and coffee actually meet.
Percolation methods, where water passes through a bed of coffee and drains away, include pour-over and drip machines. Fresh water is constantly meeting partly-spent grounds, which makes extraction efficient, so these run at wide ratios in the region of 1:15 to 1:17 and still produce a full-tasting drink. Immersion methods, where the coffee sits in a fixed volume of water, include the French press and cold brew. The water saturates and extraction slows, so immersion brewing often uses a slightly tighter ratio and a longer time.
Espresso is a different animal entirely. Its ratio, usually written as a brew ratio of around 1:2, describes the weight of liquid espresso out divided by the weight of dry coffee in, and the whole process takes well under a minute at high pressure. That is why the number looks so extreme next to a filter ratio: it is not a weaker or stronger version of the same drink, it is a fundamentally different concentration. Cold brew concentrate sits at the other extreme, brewed tight at around 1:5 to 1:8 precisely because it is meant to be diluted before drinking.
Because espresso is measured as liquid out rather than water in, selecting it sets retention to zero in this tool. The ratio then reads directly as beverage weight per gram of dose.
Grounds Retention Is the Number Nobody Mentions
Wet coffee grounds hold water. The commonly used working figure is around two grams of water retained per gram of dry coffee, and while the exact value varies with grind size, brewer geometry and how long you let it drip, that figure is close enough to plan with and far better than pretending the loss is zero.
It matters most on small brews and on tight ratios. A single 250 millilitre cup at 1:15 uses about 19 grams of coffee, which holds back roughly 38 grams of water — over 13 percent of the pour. Anyone brewing one cup and finding it consistently short by a swallow is meeting exactly this. A litre batch loses the same proportion, but at that scale most people have already compensated by habit.
It also explains a persistent frustration with drip machines. If a machine's carafe markings assume no retention, the brew always lands below the line, and the natural response is to overfill the reservoir. Doing that changes the ratio, not just the volume, so the coffee comes out weaker as well as more plentiful. Adding water to hit the line is only correct if you add coffee in proportion, which is what this page works out for you.
Practical Notes on Water, Weighing and Freshness
Water is most of the drink by mass, so its mineral content is not a trivial detail. Very soft or distilled water extracts poorly and gives a flat cup, and very hard water extracts unevenly and also scales the machine. Ordinary drinkable tap water of moderate hardness is usually the practical answer, and filtering it for taste is worthwhile if your supply is heavily chlorinated.
Weighing beats volume for the same reason it does in baking. Whole beans, coarse grounds and fine grounds all have different bulk densities, so a scoop is not a fixed mass, and a scoop of a light roast is not a fixed mass either — roast level changes density noticeably. At 1:16, allowing for grounds retention of two grams per gram of coffee, a 250 millilitre finished cup needs about 17.9 grams of coffee and about 286 grams of water. If you ignore retention and dose 15.6 grams instead, the same ratio leaves you with roughly 219 millilitres in the cup rather than 250.
Because wet grounds hold water. A commonly used working figure is about two grams retained per gram of dry coffee, so a 36 gram dose keeps roughly 72 grams of water in the filter bed. That loss scales with the dose, so it is the same proportion whether you brew one cup or a litre.
Either, because at kitchen temperatures one millilitre of water weighs almost exactly one gram. Weighing is more practical since the same scale handles both the coffee and the water, and it avoids the reading error that comes with a measuring jug.
Usually not. Sour and thin normally means under-extraction, so adding coffee at the same grind gives you a stronger sour drink. Grinding finer or extending the brew time raises extraction, which is the actual fix. Change the ratio only when the balance is right but the strength is wrong.
Because it measures a different thing. A filter ratio is coffee to water poured in, while an espresso brew ratio is the weight of liquid espresso that comes out divided by the dry dose. Espresso is also brewed under pressure in well under a minute, so it is a far more concentrated drink rather than a stronger version of filter coffee.
