Nearly every boiled-egg time you will find online is a single number for a single situation: a large egg, straight from a fridge, dropped into boiling water at sea level. Change any one of those and the number stops being right. A jumbo egg needs longer. A room-temperature egg needs less. A kitchen at five thousand feet needs noticeably longer, because the water in the pan is not as hot as the water in the recipe writer's pan. How to Use It
- Pick the yolk. Soft means liquid, jammy means thick and spoonable, just set means barely firm, hard means fully solid through the middle.
- Set the egg size. Use the size class from the box, or weigh a single egg in its shell and enter the grams for a closer answer.
- Say where the egg has been. Straight from the fridge is the default because that is where most eggs live in the United States; in countries where eggs are stored at room temperature, choose the room option.
- Enter your altitude. Leave it at zero near the coast. Above about 2,000 feet it starts to matter, and above 5,000 feet it matters a lot.
- Time from the moment the eggs go in, keep the water at a gentle rolling boil, and move the eggs into cold water the second the timer ends.
The Formula and How It Is Calculated
An egg cooks by heat travelling inward from the shell, and that process has a well-understood shape. Two things dominate it: how big the egg is, and how large the temperature gap is between the water and the point in the egg you care about. The model this page uses puts both into one expression:
Time = k × mass2/3 × ln[ 0.76 × (Twater − Tstart) ÷ (Twater − Ttarget) ]
The mass term carries the geometry. Heat has to travel from the surface to the centre, that distance grows with the cube root of the mass, and diffusion time grows with the square of distance — so time scales with mass to the power two thirds. A jumbo egg is 25 percent heavier than a large one but needs only about 16 percent longer, which is why the difference feels smaller than the size difference suggests.
The logarithm carries the temperature driving force. As the yolk approaches the water temperature the heat flow slows, so the last few degrees take disproportionately long. This is also why altitude bites: at 5,000 feet water boils at roughly 203 °F rather than 212 °F, and for a hard yolk that removes about a third of the temperature gap that was doing the work.
Boiling point is estimated as Twater = 212 °F − 1.8 °F per 1,000 feet, the standard approximation used in altitude cooking charts. Penn State Extension's note on altitude and food preservation sets out why this matters and how home preservers adjust for it; the same physics applies to a pan of eggs.
The constant k is fixed by calibration rather than derived: it is set so that a large 57-gram egg from a 40 °F fridge, dropped into boiling water at sea level, reaches a fully hard yolk in twelve minutes — the time almost every cookbook gives for exactly those conditions. The target temperatures for the other three doneness levels are then back-solved from the widely published times of six, seven and a half, and nine and a half minutes for the same reference egg. In other words the tool agrees with the standard chart at the standard conditions and only diverges when your conditions do.
Work an example. A large fridge egg at sea level for a hard yolk is 12:00 by construction. Move to Denver at about 5,280 feet and water boils at roughly 202.5 °F. The temperature gap for a hard yolk falls from 27 °F to about 17.5 °F, the logarithm rises from 1.58 to about 1.96, and the time rises to a little under fifteen minutes. That is a bigger correction than most people expect, and it is the single most common reason eggs come out underdone at altitude.
Why a Cold-Water Start Cannot Be Timed
Two methods dominate. In the boiling-water start, the water is already at a rolling boil and the eggs go in; the clock starts immediately and the time means something. In the cold-water start, eggs and cold water go in together and the pan is brought to the boil, at which point the heat is usually turned off and the eggs stand covered.
The cold-water method is gentler on shells and is what USDA's Food Safety and Inspection Service describes in its guidance on shell eggs from farm to table, where large eggs are left to stand in the covered pan for around fifteen minutes after the water reaches a boil. What it is not is timeable, because the eggs are cooking the whole way up. A thin pan on a powerful induction hob might reach a boil in four minutes; a heavy pan of cold water on a weak electric ring might take twelve.
If you prefer the cold start, the usable translation is this: whatever number this tool gives you, treat the moment the water reaches a full boil as roughly halfway through, then judge by cutting one egg open. Anyone who wants a repeatable soft or jammy yolk is better off with the boiling-water start, because it is the only method where the clock starts at a defined moment.
What Actually Sets in an Egg, and When
Egg white and yolk are different proteins and they firm up at different temperatures, which is the whole reason a soft-boiled egg is possible. White begins to set well below the temperature at which yolk thickens, so there is a window in which the white is opaque and holdable while the yolk is still liquid. That window is narrow and it closes fast, which is why sixty seconds is a big deal on a soft egg and almost irrelevant on a hard one.
It also explains why size changes the margin for error: a jumbo egg has proportionally more white to heat through before the yolk starts moving. If you are cooking for a target rather than a preference — a specific texture for a ramen egg, for instance — weigh one egg and use the custom weight field rather than the size class, because within a single box labelled large there can easily be five grams of variation.
The other variable nobody mentions is how many eggs go in at once. Six cold eggs dropped into a small pan can knock the water off the boil for the better part of a minute, and during that minute the eggs are cooking more slowly than the model assumes. Use a large pan with plenty of water, wait for the boil to recover before you start the timer if the drop is dramatic, and add about thirty seconds if you are cooking half a dozen or more in a modest pan. The calculator flags this once the count gets high.
Peeling, Freshness and the Ice Bath
Cooking time is not what makes an egg easy or hard to peel — age is. Very fresh eggs have a lower internal pH and the white bonds tightly to the inner membrane, so a two-day-old egg fights you no matter how it is cooked. Eggs that have sat for a week or two peel considerably more easily. If you have a choice, boil the older box.
The ice bath does two jobs. It stops the cooking, which protects the yolk you spent the last eight minutes aiming for, and it makes the egg contract slightly inside its shell, which helps release the membrane. Two or three minutes in genuinely cold water is enough for a soft egg.
The grey-green ring around an overcooked yolk is iron from the yolk reacting with sulphur from the white. It is harmless and purely a sign of extra time or extra heat, and rapid cooling largely prevents it.
