Butter Converter — sticks, spoons, cups and grams

Convert butter between US sticks, tablespoons, cups, grams and ounces, with the stick size set explicitly so a recipe written for one country works in another.

The US stick is a quarter of a pound and is the source of most of the confusion, because it is a unit of weight that carries volume markings. Butter elsewhere is sold in blocks of 200, 250 or 500 grams with no stick equivalent at all.
The wrapper convention treats one US cup of butter as 226.8 grams, because the stick is defined by weight and the cup marks are printed to match. Actual solid butter is lighter than that per millilitre, which matters only if you genuinely pack butter into a measuring cup.
Two is enough for baking. Butter is forgiving to within a gram or two in almost every recipe except laminated pastry.

Butter is the one ingredient that routinely appears in three incompatible units inside a single recipe collection. American recipes call for sticks and tablespoons, British ones for grams, Australian ones for cups, and none of those translate cleanly because the American stick is a unit of weight wearing a volume costume. The butter converter above handles all of them at once, with the stick size stated explicitly rather than assumed.

What This Butter Converter Does

Enter an amount in any of eight units and read it back in any other, with the four measures a recipe is most likely to want shown together underneath. Sticks, tablespoons, US cups and grams update simultaneously, so a recipe can be translated in one pass rather than one line at a time.

The stick size is a setting, not a constant. A US stick is a quarter of a pound, which is 113.4 grams, and that is the default. Butter sold elsewhere comes in blocks of 200, 250 or 500 grams, and a recipe that says "one stick" written by an author who buys 250 gram blocks means something entirely different. Where a package size is not on the list, the custom option takes any weight.

The volume basis selector is the technical heart of the tool. Choosing the wrapper convention makes one US cup equal 226.8 grams, which is the equivalence every American recipe assumes. Choosing true density uses 0.911 grams per millilitre, which is what butter actually weighs, and gives a noticeably smaller figure for the same cup. Both are correct answers to different questions, and the section below explains which one you want.

How to Use It

  1. Set the stick size first. If the recipe is American, leave it at the quarter-pound default. If it comes from somewhere butter is sold in blocks, set the block weight before anything else.
  2. Enter the amount and its unit exactly as the recipe states it, including fractions as decimals — three quarters of a cup is 0.75.
  3. Pick the unit you want to work in for the headline figure, and use the four-way grid for the rest.
  4. Leave the volume basis on the wrapper convention unless you are genuinely packing butter into a measuring cup, which is the only case where true density is the right choice.
  5. Cut on the wrapper markings where you can. It is faster and more accurate than any measuring vessel.

The Numbers Behind the Conversion

Everything starts from the US stick, which is defined by weight:

1 stick = ¼ lb = 4 oz = 113.4 g = 8 tablespoons = ½ US cup

From that, one US cup of butter is two sticks, or 226.8 grams. One tablespoon is an eighth of a stick, which is 14.2 grams, and one teaspoon is a third of that, at 4.7 grams. A pound is four sticks, or 453.6 grams. Those five relationships cover almost every American recipe.

Take the value loaded above: one stick converts to 113.4 grams, which is also 8 tablespoons, half a US cup, and 4 ounces. Scale it and nothing changes: three sticks is 340.2 grams, 24 tablespoons and one and a half cups.

The metric cup is a separate unit at 250 millilitres, against the US cup's 236.6 millilitres, so it is about six percent larger. On the wrapper convention a metric cup of butter comes to 239.6 grams. That six percent is small enough to survive a cake and large enough to matter in a shortcrust, which is why the two cup sizes are listed separately here rather than treated as the same thing.

Why the Cup Marks on the Wrapper Are Not a Density

This is the detail almost every conversion table gets quietly wrong. Butter in the United States is sold by weight — a quarter-pound stick — and the tablespoon and cup markings are printed onto the wrapper so that the stick divides neatly into those units. They are labelling conventions derived from the weight, not measurements of how much space the butter occupies.

Solid butter has a density of roughly 0.911 grams per millilitre. If the cup markings were a true volume measurement, a US cup of 236.6 millilitres would weigh about 215.6 grams, not the 226.8 grams the convention states. The gap is about five percent, and it exists because the convention rounds a quarter-pound stick into a half-cup label rather than the other way round.

In practice this almost never bites, because nobody measures butter by filling a cup with it. It matters in exactly two situations: when you are packing softened butter into a measuring cup because you have no scale, in which case true density is closer to what you will get; and when you are converting a large quantity where five percent is a meaningful weight. For everything else, the wrapper convention is the answer the recipe author intended. Sticks Are Not the Same Shape Everywhere

Two stick shapes are sold in the United States and both weigh a quarter of a pound. The long, thin stick common in the east and the shorter, fatter one common in the west hold identical weight, so every conversion on this page is unaffected. What is affected is anything that depends on dimensions: a recipe that says to slice a stick into eight pats produces different-shaped pats, and one that asks for a stick to be laid across a pastry sheet will not fit the same way.

The wrapper markings themselves are the reliable part. Both shapes are printed with tablespoon divisions along their length, and cutting on a line is accurate to a fraction of a gram. It is genuinely the most precise volume measurement available in a domestic kitchen, which is an odd thing to be able to say about a stick of fat.

Outside the US the whole system disappears. Butter is sold in rectangular blocks of 200, 250 or 500 grams with no markings, and recipes are written in grams because that is what the packaging supports. Salted, Unsalted and What Else Is in the Block

Butter is a standardised product, not simply churned cream. In the United States, the USDA Agricultural Marketing Service grade standards for butter set the requirements a product must meet to be sold and graded as butter, including its minimum milkfat content. The practical consequence for a converter is that not all of a block is fat. Butter carries a meaningful proportion of water, and European-style butters with a higher fat content carry less of it. Substituting one for the other at equal weight changes the water going into a dough, which is why the same pastry recipe behaves differently with different brands even when the grams are identical. The weight conversion is unaffected; the outcome is not.

Salted butter carries added salt, and where a recipe specifies unsalted and you substitute salted, the seasoning changes measurably at the quantities baking uses. The formal definitions of the mass and volume units underlying all of this are maintained by the NIST Office of Weights and Measures, which is also the authority behind the difference between a US cup and every other cup in the world. Common Mistakes to Avoid

  • Assuming a stick is 100 grams — it is a quarter of a pound, which is 113.4 grams. The eleven per cent shortfall is enough to change a pastry.
  • Treating a metric cup as a US cup — 250 millilitres against 236.6 is a six per cent difference, small in a cake and significant in shortcrust.
  • Applying butter's true density to a recipe's cup measure — American recipes are written against the wrapper convention, so use that unless you are physically packing a cup.
  • Reading "one stick" in a non-US recipe as a US stick — an author who buys 250 gram blocks means something more than twice the size.
  • Swapping salted for unsalted at equal weight without adjusting — the conversion is unchanged, but the seasoning of the finished bake is not.
