Adapting this for a maitre d' application
Paragraph one: the venue, the role and your availability
Say which venue and which role, then the service style and volume you are used to, then your availability. Managers hire for the shifts they cannot cover, so availability stated early works in your favour more than it does in any other field.
Paragraph two: volume, and one thing you fixed
Name the covers, rooms or transactions you are used to, then one problem you solved — a section you ran alone, a shift you covered, a cost you cut, a new starter you trained. That is what tells a manager you will be useful in week one.
Paragraph three: why this employer
This is where most letters fail. "I admire your commitment to excellence" could be sent to anyone. Name something real — a product, a recent announcement, how the team works, the venue itself, its menu or its clientele — and connect it to your own experience. If you genuinely cannot find anything specific to say, that is worth noticing before you apply.
What this field is judging behind the words
These roles are filled quietly, through the restaurant network and by ownership approaching people they have already been served by. Interviews are with the general manager or owner and are as much about manner as record — how you speak, how you handle an awkward question, whether you remember names. Expect discussion of specific difficult nights and how you resolved them. Trial services happen, and your existing regulars and industry relationships are an openly valued asset.
Mistakes that cost maitre d' candidates
- Describing the role as greeting and seating, which is the host job the maitre d' supervises
- Giving no covers, turns or team size, leaving the scope of the room unclear
- Omitting complaint recovery, which is the single reason the position exists at that level
Those are resume mistakes, but they apply to the letter for the same reason: both documents are read by someone deciding quickly whether you understand the job.
What this role needs on paper
A food protection certification is required for a person in charge in many jurisdictions, with New York City among those operating its own certificate. Alcohol server training is required or expected in most states. Wine qualifications such as WSET are optional but common at this level, since the maitre d' frequently sells the first bottle of the evening and sets the tone for beverage service.
